A new tasty recipe by chef Giuseppe Bonadonna
This month, the Hotel Brunelleschi’s chef Giuseppe Bonadonna invites you to taste the delicate flavor of the salmon with the fresh aroma of zucchini and mint with lime and mayonnaise, accompanied by intense and fruity notes of Chardonnay wine from Tenuta Tormaresca, Antinori, suggested by the maitre Alessandro Recupero.
Ingredients for 4 people:
4 salmon steaks of 200 gr each, 100 gr of sesame, 8 zucchini, 6/7 mint leaves, 4 egg yolks, 500 gr of olive oil, 1 lime, salt and pepper.
Bread the salmon in sesame seeds, roast in a pan on all sides and then bake in the oven for about 4 minutes. Wash the zucchini, cut into cubes and stir-fry with a clove of garlic; towards the end of cooking add the mint cutted julienne and salt and pepper. For the mayonnaise put the egg yolks in a bowl and turn with a whisk, add the oil very slowly, once whipped the mayonnaise, add the grated rind of lime and a dash of lime juice, salt and pepper if necessary. Put on a plate: in the center above the zucchini and lay the salmon, place the mayonnaise in a container at the side.
