History, tradition and passion for the work are key ingredients to the base of a food appreciated and envied all over the world, where the important task of shaping is performed manually by experienced master cheese. Since the raw material, we find quality and excellence, with milk obtained by buffaloes which graze free in the fields, and milk taken only by buffaloes that had at least 10 months of gestation, to permit a frequent and impeccable quality control. Another phase of crucial importance for the goodness of mozzarella is the production, limited to a few kilograms, and the raw material: milk, which undergoes a process to “raw”, then it is simply thermised and not pasteurized.

The Hotel Brunelleschi offers its guests an unmissable itinerary characterized by the best of dairy production from Campania, through the proposals of Osteria della Pagliazza, located on the ground floor of the hotel, open every day from 12:30 to 14:30 and from 19:00 to 22:30. A veritable reign of typicality on the table which now is enriched by the exquisite dairy products, all made with buffalo mozzarella from Campania and proposed in the special plate “selection of fresh and aged cheeses”.
